Tangy Beef Brisket

Cut: Brisket
Preparation Time: 15 Minutes
Cook Time: Approx. 3 hours

Main Ingredients:

 1 fresh beef brisket (approx. 3-4 lbs.)
 2-3 medium onions, sliced
 1 bottle of chili sauce (12 oz.)
 1 bottle of water (12 oz.)
 3/4 cup brown sugar
 Seasoning salt
 1 bay leaf
 Carrots and potatoes, peeled and chunked, as desired

Directions:
  1. Mix chili sauce, water (one full jar) and brown sugar together. Pour most, but not all, in roasting pan. Add most, but not all, sliced onions. Rinse brisket, season with salt to taste and place fatty side up on top of onions.
  2. Add bay leaf. Add carrots and potatoes around brisket as desired. Top with remaining onions and sauce. Cover and bake for 2 1/2 - 3 hours at 325 degrees. Remove and allow to cool about 1/2 hour. Slice brisket (against the grain). Return brisket to juice in the pan until ready to serve. Serves 10-12.
Recipe Tips:
  • Can be prepared a day ahead and refrigerated.
  • Makes even tastier sandwiches the next day.
  • If including potatoes, watch juice levels.
  • Fresh beef brisket is not the same as corned beef brisket so choose carefully.
