New York Strip Roast
Cut: Top Loin Roast/Strip Roast

Main Ingredients:
1 5 to 5-1/2 pound New York strip roast
2 tablespoons extra virgin olive oil
2 tablespoons kosher salt
1 tablespoon fresh ground pepper
Directions:
- Preheat oven to 500 degrees F.
- Place roast, fat side up, in a roasting pan. Rub with olive oil and leave at room temperature for 30 minutes.
- Season all surfaces with salt and pepper. Place in oven for 12 minutes. Reduce temperature to 300 degrees F and roast about 10-12 minutes per pound for medium rare (135 degrees F internal temperature) or to desired doneness.
- Loosely tent with aluminum foil and let rest for about 20 minutes, slice roast across the grain.
