Cilantro-Ginger Flank Steak

Cut: Flank Steak
Total recipe time: 25 minutes

Main Ingredients:

1 pound flank steak
1 tablespoon grated fresh ginger
1 tablespoon olive oil
6 tablespoons chopped fresh cilantro, divided
1 teaspoon salt
½ teaspoon pepper
1 lime
4 cups cooked basmati rice
2 cups fully cooked shelled frozen edamame, thawed

Directions:
1.  Preheat grill to 400 degrees.  Stir together ginger, oil and 2 tablespoons cilantro in a small bowl.  Rub mixture on steak and sprinkle with pepper. 
2.  Grill steak, covered with grill lid, 5-6 minutes on each side or to desired doneness. 
3.  Remove from grill; squeeze juice from lime over steak and sprinkle with 1 tsp. salt. 
4.  Cover loosely with foil and let stand 6-8 minutes.  Meanwhile stir edamame and remaining four tablespoons cilantro into prepared rice.  Cut steak across grain into thin slices and serve over rice.   Serves 4.
