Beefy Chili Mac

Cut: Cubed Steak
Preparation Time: 10 Minutes
Cook Time: 20 Minutes

Main Ingredients:

 1 lb. beef cubed steaks
 1 TBS. vegetable oil
 1 medium onion, chopped
 1/4 tsp. salt
 1 package taco seasoning (1.25 oz.)
 2 cans diced tomatoes, undrained (14 1/2 to 16 oz. each)
 1 1/2 c. uncooked rotini pasta
 1/2 c. water
 1/2 c. cheddar cheese, shredded

Directions:
  1. Cut beef steaks lengthwise into 1-inch wide strips and then crosswise into 1-inch pieces. Heat oil in Dutch oven (or large pot) over medium-high heat until hot. Add beef and onion; cook and stir 3 minutes. Season with salt.
  2. Stir taco seasonings, tomatoes, pasta and water into beef. Bring to a boil; reduce heat to low. Cover tightly and simmer 20 minutes or until pasta is tender. Sprinkle with cheese before serving. Makes 4 servings.
Recipe Tips:
  • This is a great weeknight family meal - it's quick and everyone will love it!
  • To help your budget, substitute the cubed steaks with 1 lb. of ground round.
  • Note that the pasta is added uncooked - it cooks during the 15-20 minute simmering.
